  16.  Quick Coconut Bread        2 loaves

  19. 4 C flour
  20. 1/3 C sugar
  21. 2 tsp baking powder
  22. 1/4 tsp salt
  23.  
  24. 1 egg, beaten
  25. 1 C canned or fresh coconut milk or milk
  26. 1/2 C butter or margarine, melted
  27. 1 tsp vanilla extract
  28. 2 C grated unsweetened coconut
  29. 1 C currants or raisins (optional)

  32. Preheat oven to 350 F.

  34. Sift the dry ingredients into a mixing bowl.  Blend in egg, milk,
  35. butter, & vanilla.  Mix in the grated coconut (& currants/raisins).
  36. Turn out onto a floured board and knead slightly.  Shape into 2 loaves
  37. and pat into 2 buttered medium loaf pans.  Bake 40-45 min, until a
  38. toothpick in the center comes out clean.
